Check out my latest project,  False Positives and investigating logs in Azure Sentinel, Microsoft's native SIEM tool. This Azure Honeynet project is hands down the best project  I've done while learning about cloud security. I' was able to use  Azure to harden the environment and nullify attacks as well as implement NIST SP 800-53.
